Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley, Trevor Harris, and John Mallick are the men who make Waterford's organic project possible. They are among the first Irish organic farmers to take on the challenge of organically cultivating malting barley – an endeavor subject to numerous regulations and strict controls. Organic GAIA: 1.1 has met and passed these. Through the Organic Trust organization, the Irish authority in this field, the new Waterford whisky was the first in Ireland to be organically certified.

The single malt also marks the start of a new Waterford series: Arcadian will celebrate old varieties, unusual cultivation methods, and inspiring barley growers who, like Waterford, seek to explore flavors. This includes the flavor dimensions of organic barley. For Organic: GAIA 1.1, Waterford collectively processed the 2016 harvests of the aforementioned farmers, as the yields were not yet sufficient for Single Farm Origins. In the future, up to 600 barrels of organic whisky are to be produced at Waterford annually.

Ireland's first certified Organic Whisky is named after Gaia, the personification of the Earth in Greek mythology. Accordingly, the single malt is not only organically produced but also 100% natural. After maturation in first-fill casks from the USA (42%), virgin oak casks (17%), French oak casks (23%), and Vin Doux Naturel casks (18%), Organic: GAIA 1.1 was bottled at 50% vol.
