For the whiskies with clear Danish characteristics, the distillery sources from its immediate surroundings: \u003cstrong\u003elocally grown barley and rye, peat from the Klosterlund Museum, which documents Denmark's peat extraction, and heather from the wild landscape of West Jutland\u003c\/strong\u003e.\u003cbr\u003e\u003cbr\u003eThe \u003cstrong\u003edistillation over an open fire\u003c\/strong\u003e imparts deep, complex aromas to both smoky and non-smoky Stauning New Make. The \u003cstrong\u003e24 small, direct-fired copper pot stills\u003c\/strong\u003e are as much a trademark for the Danish distillers as their \u003cstrong\u003ein-house malting floor\u003c\/strong\u003e. The \u003cstrong\u003eexperimental spirit\u003c\/strong\u003e with which they combine pre-industrial methods with modern ones, some of which are their own creations, such as the malt turner, makes their Danish whiskies so interesting for connoisseurs worldwide.
