Glenmorangie Allta was created with a very special yeast that grows wild on Glenmorangie's own Cadboll barley not far from the Glenmorangie House. Glenmorangie is the first Scottish distillery to cultivate its own yeast for this whisky and use it in production.\u003cbr\u003eDr. Bill Lumsden collected the wild yeast strain from the grain of the fields, which is used for this rich and fruity whisky. A particularly creamy, aromatic single malt emerged from the interplay of this yeast with the barley. Glenmorangie Allta (Scottish Gaelic for \"wild\" and pronounced \"al-ta\") matured in ex-Bourbon casks, including many second-fill casks, in which the fruity character particularly comes to the fore.
