Not only since its acquisition by Andrew Symington in 2002 has Edradour been high on the popularity scale of single malt fans. The unadulterated whiskies from the distillery, located in the Highlands east of Pitlochry, are partly still produced with original equipment from the 19th century. Three first-fill sherry butts and three first-fill bourbon casks from Edradour were masterfully blended for our Signatory Small Batch #8. The result perfectly matches the upcoming season in terms of taste. The limited whisky entices with heavy sherry aromas, including currants, dates, and raisins, followed by toasted almonds and notes of dark dark chocolate. In the background, a hint of honey and caramel from the ex-bourbon casks adds warmth to this bottling. Berry and dark dried fruits are also present on the palate, before creamy mocha and various baking spices enter the taste stage.
