Tasting Notes:

Nose: Crisp, intense pineapple cubes, peach slices, and apricot preserves are complemented by garden-fresh blossoms, vanilla ice cream, and a delicate background of smoke.

Palate: A rich and oily mouthfeel delivers syrupy tropical and stone fruits. Sooty peat smoke and zesty minerality are balanced by lemon verbena and orange liqueurs.

Finish: Lingering smoke, punctuated by charred oak and tingling white pepper.

A new Small Batch Release from Bimber Distillery

Bimber is synonymous with traditional methods and washbacks from their own cooperage, local products, and fermentation times of seven days, more than twice as long as usual. Doesn't sound like a big city operation? It is though: The Craft Distillery calls London its home. For the production of their fruity single malts, the artisan distillers are not influenced by the fast pace of the metropolis. With attention to detail, they create one of the few English whiskies in limited batch sizes.

For their new Single Malt London Whisky, the urban distillers drew inspiration from a place that makes the hearts of Scotch lovers beat faster: Islay. The characterful Quarter Casks, in which the London whisky received its subtly peaty, mineral finish, come from this stormy island. The previous maturation in First Fill Bourbon Barrels gives the Bimber Whisky its creamy texture with notes of vanilla and caramel. This well-balanced dram for smoke novices is limited to one bottle per customer.
