Small batch, big taste: Bimber Distillery Small Batch Releases Two new small batch bottlings from the London craft distillery include a vatting of various distillates matured in American white oak ex-bourbon barrels. Together, they produce a whisky with notes of bright and dried fruits, creamy vanilla, and tingling pepper spice. The second new bottling is limited to 950 bottles. It consists of a whisky that Bimber matured in First Fill Bourbon Barrels. It received its finish in an Oloroso Sherry Butt. Two new small batch bottlings from the London craft distillery include a vatting of various distillates matured in American white oak ex-bourbon barrels. The popular whiskies from Bimber Distillery are back! London – that means big city, noise, and hustle. At Bimber, however, time seems to stand still. The distillery from the British metropolis goes its own way – and quite successfully. The craft distillery relies entirely on traditional methods and local products: The barley for the Single Malt London Whisky comes from a single farm in Hampshire, is traditionally malted on the malting floor, and ferments for seven days, more than twice as long as usual, in washbacks from the in-house cooperage.

For such high artisanal standards and attention to detail, Bimber fans gladly accept the limited batch sizes of the whisky. This results in another characteristic of the fruity single malt: it sells out quickly.
