This Hine Bonneuil-series Cognac is a single-estate spirit made from grapes grown exclusively in the Grande Champagne cru village of Bonneuil, known for its chalky soils. It is produced without blending different vintages or vineyards, highlighting a specific terroir and harvest year.
Hine first launched the Bonneuil vintage series in 2005, continuing the limited editions in 2006, 2008, 2010, and 2012. Each edition comprises only a handful of casks (around 12 casks, approximately 450 bottles for 2012).
Serving & Pairing
Best enjoyed neat, at room temperature or slightly chilled/frappé to emphasize its freshness and allow the various nuances of flavor to slowly emerge.
Recommended pairings include Pata Negra ham, oysters, or sashimi, where the freshness, creaminess, and nutty notes of the Cognac complement lighter, umami-rich dishes.
Vintage & Production
Vintage: 2012, from a single harvest, bottled in 2022 after ten years of aging in oak barrels.
Distillation: Ugni Blanc grapes are double-distilled on the lees to enhance complexity.
Aging: At least 10 years in lightly toasted French oak barrels (Hine consciously avoids dense Limousin oak to prevent overly strong tannins, preferring finer-grained wood from other regions).
