Tasting Notes:
Nose: Red grapes, plowed earth, dried fruit, stable smell, baked apples cooking in a pot and petrichor, the aroma of a forest after the first rain shower in days.
Taste: Oily mouthfeel, white pepper, apricots, spices, toffee, malt, wood shavings.
Finish: Dry, oily, spices, chocolate and – long-lasting – malt.
"Today I bought a distillery – it’s good to be back," Mark Reynier tweeted in 2014. Six years later, his Waterford Distillery enriches the whisky world with distillates that are the result of the radical implementation of terroir. In keeping with the principle known from the wine world, the Irish barley for Waterford is grown, stored, malted, and distilled separately. Because: Terroir is the realization that soil composition, sun exposure, or location lead to clear differences – not only in the barley itself, but also in the aroma of single malts.
Each Waterford bottling explores a location in the Irish barley-growing region where the distillery is located. Terroir by terroir, the exclusive "Single Farm Origins" reflect their place of origin in taste. Reynier and Co. currently work with 72 farms for this. For example, Ballykilcavan and Bannow Island, whose barley thrives on the one hand protected by picturesque old forests, and on the other hand is exposed to salty Atlantic winds on the coast. Ballykilcavan Edition 1.1 and Bannow Island Edition 1.1, Waterford's pioneer spirits, sold out very quickly due to high demand. Now the distillery is following up with new editions of the two completely different terroirs. Ballykilcavan Edition 1.2 and Bannow Island Edition 1.2 are as individual and complex as their predecessors. Also limited, they differ in the composition of the casks and the slightly longer maturation period.
They are complemented by two further single farm bottlings. The barley from Sheestown in County Kilkenny grows on a hilly terroir of well-drained clay soil. It is the distillation base for Waterford's honey-sweet and spicy Sheestown Edition 1.1. In the rain shadow of the Wicklow Mountains, Robert Milne's family has been cultivating the fertile fields for five generations, whose barley was distilled in 2016 to create the fruity and sparkling Ballymorgan Edition 1.1. The whiskies are bottled at 50% vol. and in natural form without colorings, chill filtration, or additives.
